225g (9 oz) self raising flour 225g (9 oz) caster sugar 1tbsp soya flour 25g (1 oz) cocoa 1tsp baking powder pinch of salt 1tsp natural vanilla essence 1/4 tsp (a few drops!) white wine vinegar 75ml (3 fl oz) vegetable oil 150ml (6 fl oz) water To decorate: 100g (4 oz) plain chocolate, melted

1 | Put self-raising flour, soya flour, baking powder, salt, sugar, and cocoa in a bowl and mix well. |
2 | Pour over vegetable oil, vanilla essence and vinegar, and then the water. |
3 | Mix thoroughly with a wooden spoon or electric whisk. |
4 | Pour into shallow oblong tin and cook for about 25 minutes at 200ºC/400ºF until cooked. |
5 | When the cake has cooled, cut it into 12 'bars'. |
6 | Ice the bars, or dip in melted chocolate. Mark on bark details with a cocktail stick and leave on a plate to set. |
